"Interval training is a specialized form of aerobic workout that alternates bouts of heavy work with periods of rest or light work. As such, it works both your body’s aerobic and anaerobic systems. During the high-intensity part of the workout, your body draws upon glycogen (a form of sugar) stored in the muscles for energy. No oxygen is required to produce energy during this phase of the workout, thus it is considered anaerobic. Anaerobic exercise produces an oxygen debt, the byproduct of which is lactic acid, experienced as the burning sensation in your muscles. During the slower parts of the workout, your heart and lungs work aerobically (with oxygen) to convert stored carbohydrates into energy and to pay back the accumulated oxygen debt and break down the lactic acid.
With repeated interval training, your body adapts to the alternating stresses of the training. Your body builds new capillaries so that it can more efficiently move oxygen into muscles and lactic acid out. Muscles develop a higher tolerance to the buildup of lactic acid and your heart muscle is strengthened."
